Fire Roasted Tomato Soup


My mom gave me some beautiful little cherry tomatoes and I figured since fall was here what better thing to do then make Tomato soup.

  And luckily I had the extra ingredients on hand. This is what you will need... 
     
- 2 Cups of Cherry tomatoes  
-1 14.5 oz can organic roasted tomatoes (your choice of what kind) 
- 3 garlic cloves (mine were huge so if they are small add 2-3 more 
-2 shallots
-2 Tbsp of Olive Oil
- salt & pepper to taste
- 2 cups Vegetable Broth (make sure it's gluten free)
- 2 Tbsp Grass fed Butter
- 1/4 cup Heavy cream or coconut cream 
-1 Bay leaf
- 1 Tbsp of Basil 


So here it goes... 

Turn oven on to 450 degrees 
In a glass bowl/pan or whatever you have add cherry tomatoes, garlic, shallots and can of roasted tomatoes and Olive oil.


Cook for 20-30 minutes to roast or until the tomatoes are soft and slightly browned. 


Put ingredients in a pot on the stove and add bay leaf, basil, butter and vegetable broth and bring to a boil. Turn down heat and let simmer for 15 minutes. 


Using hand blender, blend all ingredients until smooth. Return to low heat and stir in heavy whipping cream.
Serve warm... Yummy, healthy, Tomato Soup to warm you up this winter.
