Paleo Cassava Flour Brownies


My first time using Ottos Cassava Flour and it did not disappoint!   The problem with eating all the Halloween candy that I splurged on is, it literally leaves me addicted to refined sugar lack a crack addict that can only think about their next fix and the extreme measures they might go to to get it!!  Like ALL day long all I could think about was sweets!    And it damn sure doesn't help when my hubs comes home and starts giving me shit for throwing out all the junk in the house!   The boss man had a meeting tonight so I told him I would do us both a favor and make some paleo brownies to ease us back into normal life.   Now I've had Ottos Cassava Flour in the cupboard but Ive yet to try it out so I figured this was a great time to do so, and I'm not lying when I say these are the closest things to gluten filled brownies that I've ever tasted!   The brownies totally did the trick and I don't feel guilty about this splurge either!  

Ingredients:
Melt:
1 cup chocolate chips (I use Enjoy Life) 
5 tbsp butter, ghee or coconut oil
Dry:
1 cup coconut sugar
1/4 cup cassava flour
2 tbsp unsweetened cocao
1/4 tsp salt

Whisk:
2 eggs
1 tbsp vanilla extract

Preheat oven to 350F and spray a 8X8 baking dish with coconut oil.  

Melt chocolate chips and butter in saucepan on low just until melted.

Combine dry ingredients in a large mixing bowl.

Whisk egg and vanilla in small bowl.

Add melted chocolate and eggs to large mixing bowl with dry ingredients.  Mix to form smooth batter.

Add to baking dish and sprinkle with extra Choc chips.  Cook for 30 minutes or until toothpick comes out clean.
