Raw Paleo Blueberry Cheesecake bites


I've been seeing Raw desserts all over Pinterest & online & I've been wanting to try one so bad. So today I took a couple  of different recipes and combined them to make this one. And let me tell you it tasted as good as it looked. It was really easy to make and literally the cleanest ingredients ever!  Now you have to soak the cashews over night, the reason being is when they've soaked all night in water they become super soft and easily process up in the food processor. So don't skip that part it's very important.  Also the dates for the filling need to be soaked for 1 hour. Don't forget the Dates have a seed so make sure and pull the Date apart and pull out the seeds!  But other then that your set for this recipe. I used my silicone muffin cups and they came out easily and looked really pretty.  So good luck to you on this one it won't dissapoint I promise!!

Crust Ingredients


-1 cup Raw Almonds
-1/4 cup dates (about 6)
-2 Tbsp Shredded Coconut
-1 Tbsp Coconut Oil
- Pinch of Sea Salt  
- Sillicone muffin cups (makes 12)

For the crust

In a food processor grind the almonds.
Chop the dates and add to the almonds with the salt. Grind again into crumbs.
Add the coconut oil and zap again until the mixture turns into a moist dough that holds together when pressed.
Press into the bottom of small silicone muffin cups.  Stick in freezer to firm up while making the filling. 




For filling

-1 1/2 cups Cashews (soaked overnight)
-1 cup Blueberries
-8 Medjool Dates (soaked for one hour)
-juice of 1/2 a lemon 
-1/2 Tsp Vanilla extract
-2 Tbsp Maple syrup
-1 Tbsp Coconut Oil
-pinch of Sea Salt


Blend the cashews and blueberries together. Then add dates and juice of lemon. Next add dates, vanilla, maple syrup,Coconut Oil (melted) and sea salt. Blend really well until you get a smooth consistency. 

 
Spoon blueberry moisture over crust in muffin cups about 3/4 way to top. Maybe a little more. 


Place cups back in freezer for at least one hour. When your ready to serve pull out & let thaw for 5 minutes. Add your coconut whipped topping. 

Take Coconut Cream & blend with hand mixer till it becomes whipped. Add whatever topping you'd like. I used a little bit of the crust mixture that was leftover and Pomegranate seeds. You could use Blueberries or whatever you'd like!!
