Chocolate Coconut Paleo Cookies


Our cousin brought these amazing Paleo cookies to a family gathering and I loved them so much i made them at home. And she was right they are super easy and a great thing to grab when the sweet tooth hits.  I bagged them & stuck them in the freezer so I can just pull one out as I want one. These are a must try!! 

(Paleo) Chocolate Coconut Cookies
Makes 12 cookies

2 eggs 

2 tablespoons butter, melted and cooled

2 tablespoons maple syrup (or more for sweeter cookies)

1/2 teaspoon vanilla extract

1 cup shredded coconut

2 tablespoons unsweetened cocoa powder 

1 pinch baking soda

1/2 cup sliced almonds

1/4 cup of enjoy life chocolate chips (these were added from original recipe)


1. Preheat oven to 350 F. In a medium-sized bowl, whisk the eggs, melted butter, maple syrup, and vanilla. Mix in the cocoa powder, baking soda, and shredded coconut until well combined. Fold in the almonds.


2. Divide into 12 dollops on a parchment paper-lined cookie sheet, and flatten them with a fork. Bake for 20 to 30 minutes or until slightly firm to the touch.
